Ultimate Chocolate Birthday Cake

I hope you're having a great day.

As it was Luke's birthday on Monday I thought this would be a great opportunity to share his birthday cake with you which I made over the weekend with the help of my mum as I was too tired after my training courses. If she didn't step in the cake definitely would have been thrown at the wall or out of the window. This is a three or four layered cake; it's up to you how many layers you would like, covered and filled with chocolate frosting and lots of chocolate! You can make this cake in anyway you'd like to and you do not need to cover it in the same chocolate I have; it all comes down to choice! 

So let's get too it;
You will need:
for the cake;
375g caster sugar
225g self raising flour
65g cocoa powder
1 1/2 tsp bicarbonate of soda
2 eggs
250ml milk
125ml vegetable oil
2tsp vanilla extract
225ml boiling water

(You need to do the cake recipe twice to have four layers)

Preheat your oven to 350F or 180C | Gas Mark 4. Line two 9inch tins.
Stir sugar, flour, cocoa and bicarbonate of soda together.
Whisk eggs, milk, oil and vanilla together.
Sift in the dry ingredients and mix till combined with no lumps.
Add water and milk well.
Pour into your prepared tins and bake for 30-35 minutes.
For the icing;
284g caster sugar
80ml water
5 egg whites
450g butter
340g milk chocolate

Place the caster sugar and water into a saucepan and boil until it is soft ball  (Do not stir) (240F)
Meanwhile, mix the egg whites in a stand mixer until stiff peaks. 
Pour into the egg whites and keep mixing until the bowl has cooled down completely; stop mixing. 
Add in the butter a bit at a time (it may turn to liquid but keep mixing).
Add the chocolate.
Do not put the mixture into the fridge; it will harden!
Add some of the icing in between the cakes and push down after each layer. Add to the top and around the sides using a spatula. 
Decorate with whatever you'd like. I used chocolate fingers, mini fudge pieces, mini chocolate orange segments and caramel nibbles.
