Snickerdoodles | Blogmas Day 4

It's 21 days until Christmas ahhhhh! And I'm kicking off day four of Blogmas with my first Christmas bake! Today I am bringing you these beautiful snickerdoodles (which my mum kindly made for me a few weeks ago). But this is an incredible recipe which we use on a regular basis around Christmas! Snickerdoodles are the perfect cookie/biscuit if you're not a fan of chocolate, or ginger but want something a little bit festive and spicy (the nice spice) for this season! They're crunchy on the outside, soft in the inside and filled with lots of yummyness too of the cinnamon and sugar!

So let's get too it;
You will need;
8oz butter
300g sugar
1tsp vanilla extract
2 eggs
372g plain flour
1 1/2 tsp baking powder
3tbsp cinnamon
200g sugar

Preheat your oven to 180 degrees Celsius and grease 4 trays (just so you don't have to wait for a batch too cool on the tray before putting in another load).
Cream the butter and sugar together, then add the vanilla and eggs one at a time, mixing in between.
Sift in the flour and baking powder until it's just combined.
Using a cake pop scoop to portion the cookie mix, place each scoop into a bowl of the sugar and cinnamon mix. Roll this around to cover completely.
Place on a baking tray, leaving room between each of them to spread.
Bake for 12-15 minutes.
Leave to cool on the tray for 1-2 minutes and then transfer to a cooling rack.

  1. You know what, I've heard so much about these but I've never had one, let alone made them but they sounds so good! Cinnamon is very popular within this season. Will defo bookmark these!
